Pork Carnitas is such a wonderful Mexican style meal. Perfect for a crowd, too! If you are interested in a guesstimate recipe I will list it below for a 1-2 lb piece of meat. All of my measurements are close. Feel free to add more or less of anything listed.
1 1/2 lbs of pork roast cut into 1-2 inch pieces
2 large onions - 1 to cook meat with, 1 to broil when meat is done
2 large oranges juiced and cut in quarters
1/4 cup orange juice if you have no oranges
3 TBS oil of your choice enough to coat all of the meat, oranges, and onions
2 tsp cumin
1 tsp cinnamon
2 tsp chili powder
2 bay leaves
2 garlic cloves or to taste
salt & pepper to taste
Mix thoroughly coating each piece of meat, onions and orange pieces
Bake 3 hours or until fork-tender.
Drain and transfer to a baking dish discarding orange pieces and cover with sliced onions.
Broil for 3-4 minutes, stir and broil 3-4 minutes again. Repeat until everything is crispy.
Use meat in tortilla skin or taco shell or even taco chips then add cheese and your favorite toppings.
