This is the best snicky-snack to make with leftover fried chicken. Buy the family pack of chicken to assure leftovers! The amounts in this video make about 8-10 white bread sandwichs. It could make endless hors d'oeuvres that are super easy to throw together. Feel free to add veggies or nuts of your choice. My hubby doesn't like the fruit so much, so I make it for his lunches. You can use low-fat mayo, or even play around with plain yogurt.
The recipe as it appears in the video:
3 cups bite-size pieces leftover fried chicken, crispy bits included
1 1/2 cups mayo - more or less for desired creaminess
1 stalk of chopped celery
Half a sweet onion
2-3 chopped pickles or teaspoon of pickle relish
1-2 splashes of apple cider vinegar
2 pinches of sugar
Mix well, let chill for 1-2 hours if you can handle it. Otherwise, eat immediately.
You could also add 10-12 grapes halved and or quartered
Chopped pecans
Sliced and quartered apple sprinkled with lemon juice
Mandarin orange slices
Great on crackers, bread or straight out of the bowl.
